Charset problem with dropdown editor...

I'm encountering a problem with the dropdown editor and charset.

At the beginning, the file fr_FR.lang.php in custom/include/language was in ISO-8859-1.
I've added a translation for a new dropdown list.
With the Dropdown editor, the accentuated chars were not correctly encoded in the file, and were not displayed correctly in Sugar.
Then I converted fr_FR.lang.php to utf-8.
I try again to use the dropdown editor to edit the translation, but the accentuated chars are still wrong encoded !!!!

How does work the Dropdown editor ? Which charset must I use ?

I'm using SugarCR 5.1 (not a fresh install, but upgraded step by step for each new release since the 4.x).

Would you mind checking it with a fresh (test) install? I know that there were problems but since 5.1 they don't occur anymore (everything should be in utf8). We do (did) have the same problem in German.

I've found a solution to our problem. We used 5.1.0a, and there is a 5.1.0c patch.
I've installed the patch and now it's working well !

But your suggestion is interesting.
There are some bugs in Sugar, and I think, that it's probably caused by our multiple upgrades from 3.5 versions (not 4.x, there was a mistake)...

I will test the following : copy database on a new server, check out latest SugarCE 5.1 sources and copy the custom directory.
