Creating Tracked Data w/ Stats and Graphs

I need to create custom fields that I want to save and track the new data on each entry. I then want to graph that data over time, and or use statistics to show the data different ways. Can I get some ideas here how I might go about doing this, or if it is even possible in Sugar.
