where can I find information to help me create my own table with its own categories?

To create a table by sugar framework, you have to create a sugar module to map this table.
You also can create a table directly on database by SQL commands or using some tool, but this way sugar will have no knowleadge of this table instead of by your own programming code.

Actually you can create a table not assigned to some module by defining a Table Dictionary metadata. Table Dictionary metadata are, by default, implemented to define relationship tables, but you can without big deal define an independent table by Table Dictionary metadata.
