I'm very new to SugarCRM and have setup the community version. I'd like to setup a number of custom account categories such as agent, managing general agent and special agent. How can I do this?

You as an admin user can create a new custom field in the accounts module and define the values the user should be able to select from.
1.) Admin->Studio->Accounts->Fields->Add Field
Select data type "dropdown"
Give the custom field a name, e.g. 'category', create a new drop-down-list 'category_list' with all the values needed for selection and choose the default value.
(see screenshots ScreenShot168.jpg and ScreenShot169.jpg)
Don't forget to 'save' the custom field and drop-down-list definition.
2.) Now you'll have to add the new field to the view definitions to see it whenever you edit or view an account. You can do this in Studio too:
Admin->Studio->Accounts->Layouts
Select the view(s) where you want to see the new custom variable:
a) EditView (the view used whenever you create a new or edit an existing account)
b) DetailView (the view for viewing an existing account)
c) ListView (definition of one row of the account's list view)
It is important to 'save & deploy' the views you have changed.
Now you should see the new category field in the views.
