we are looking at using SugarCRM for leads, but also for case and bugs management. I got inbound email working, but I didn't find a way to send updates to cases or bugs to the customer by email... Can we do that wtih SugarCRM ?

With Sugar Professional you have the Workflow tool in which you can set up workflows to email changes in status on records back to customers.
In Sugar Community Edition you would have to write custom code to do this.

To elaborate on this, you will want to use the logic hooks in Sugar Open Source. Sugar Pro has a nice interface for building this functionality in the GUI, and will allow you to easily modify email templates, change overall notification structure, and turn workflow on and off.
If you need help configuring this let me know, once you get started using the system it has some very powerful potential.
