Do you need to know coding in order to use Sugar Open Source or is it user friendly for general business usage where a sales person or marketing person may not have those capabilities or access to coding and IT support etc?

Depending on your needs you don´t need to mess with code.
You just need to:
download the sugar installer into htdocs folder;
unzip it and rename the folder to a user friendly one;
Go to browser and type the address to access the folder you just renamed, like: http://mysite/mysugar/install.php
Follow the instructions in order to setup your sugar instance;
Download and install language pack through Admin -> Module Loader.
Perform the customizations through Admin -> Studio

If I have downloaded it onto a mac system--and it is sitting in my applications folder, but i cannot seem to open it or identify what to type in the browser--should i uninstall it and start the process all over again? Is there any detriment to uninstalling and reinstalling?

I believe you can uninstall the sugar instance, download and install the fast stack.
