I am in a process of installing SugarCRM on a new server in the next week or so and I was curious as to the final release.. should I wait? is it safe to go with RC2 ?

From nearly four years experience of SugarCRM, IMHO, you should not consider any new release of SugarCRM fit for production use until the release of Patch e or f. New releases have too many issues (I have the scars).
You may be best advised to deploy 5.2j, which is stable and wait for six months for 5.5 to mature sufficiently
Apache/2.2.3 (Debian) PHP/5.2.0-8+etch11 MySQL 5.0.32
