Is it possible to use relationships but display them in the editview as simple selectboxes instead of the "Popup-Selector" Method?

Sure ... just write your own selectrelate field with that logic. Should be no big thing.

Take a look of how the assigned to field is renderized in search panels, you could do the same for your case.
