Default URGENT: Which character set is the right one?

I upgradet to 4.5 and I like ti very much.
The only doubt I have now is which character set do I need to set as the defaulf one (ISO-8859-1)?
    I run FC5 in europe
I tried several character sets and sent mysql emails from a gmail account.
Whilst the subject header looks good, the system removes text after it find the first german umlaut

Our preliminary tetst have shown that ISO-8859-2 seems to work for German special characters for our own account, but not with say a GMX account, strange!
    Cheers Malcolm

I was able to reproduce your issue with text-only emails, whereas HTML messages worked fine. I'm not familiar with mysql emails, but I've used the ISO-8859-1 encoding with Outlook 2000, Thunderbird latest and a webmail client, and all behaved the same with respect to this issue. The Sugar 4.5 installation runs with MySQL 4.1.18 with UTF8 character set, PHP 5.0.4, Apache 2.0.58 on Windows 2000 Server. However, after rebooting the server and re-testing a few minutes ago, everything works fine The only explanation I can figure out ATM is related to stopping and restarting MySQL and/or the Apache servers, which may interfere with the proper decoding of emails.

Default URGENT: Re: Which character set is the right one?

I see that hte charset ISO 8859-2 is for central and eastern europe.
I have many emails from spain (ñ, í, etc..) and Germany (äü9, etc...)
    My installation versions are these:
    mysql-5.0.22-1.FC5.1
    php-5.1.4-1
    httpd-2.2.2-1.2

I checked http.conf; the default charset is: AddDefaultCharset UTF-8
The default charset in php.ini is: default_charset no value (Local) no value (Master)
I checked also phpmyadmin; the charset is set to: utf8_general_ci Unicode (multilingual), case-insensitive

Any ideas? I really cannot use sugarcrm w/o fixing this. it is really crucial.
    Any help is very welcomed.
Or any hint to where I can find documentation. In no manual (admin, etc..) I could find the correct settings
