Create Candidate log using incoming email

I am very new to Sugar and have need to log communications with our candidates. Reading the manual it appears there maybe an opportunity to use some of the 'Incoming email' features.

The aim: to log email communications with a candidate (or client for that matter) from outside of Sugar. (e.g. I'm located on a client's site using their internal email system to email candidates/clients and I want the text to be recorded in Sugar against the candidate/client)

One thought is to CC an email address that is attached to a group then use some type of rule to send the text to a field in the candidates record.

Is something like this possible (by this means or some other)?

What email client are you using ... you can sync emails from outlook and thunderbird using one of the connectors in sugarforge
