custom Fields & Setting value on the Fly

Hi,
So I know how to change built-in-fields on the fly (ie change the contents of a drop down based on role)
but how can you do it when its a custom field?

I Cant find where it assigns the values to the template.

Please take a look

custom\include\language\en_us.php

and

cache\dynamic_fields\"Module Nmae"\fields.php

Hope it will help you to change the custom fields.
