Customizable product cost for products from catalog

When you add products from the product catalog to a quote the cost field becomes read-only. I would like to override this behavior and keep the cost editable because I have a product with a variable cost.

I cannot use a custom product because I want to be able to report on how many quotes were created with that specific product in it.

Can this be configured somewhere or what is the recommended way to override the javascript that implements this behavior?

You can achieve this by editing the file jssource/src_files/modules/Quotes/quotes.js and then rebuild your javascript. This probably isn't the recommended way since it's not upgrade safe. You need to maintain your own patchset if you go this route.
