Can we customize DASHLETS? I can only see limited options

Sugar is open source ... You can customize EVERYTHING. ;-)

I can only view the dashlets charts in bars and pie chart format. Can this be customized so that I get a funnel view?

It is not possible to change the chart layout without code changes.
For customizations on code level you should have a look into the developer guides, here available for version 6.2: Sugar Developer Zone - SugarCRM Developer Documentation, Sugar Documentation
