Does anyone have any advice for downgrading from 5.0 to 4.5? Not wanting to wait for modules to catch up we though this would be the best move, but don't want to risk losing our current database of contacts and projects, etc.

Do you have a backup of your 4.5 from prior to it being upgraded?
If so, the simple solution would be to restore that backup, then import the difference in data through the backend.

Unfortunately we installed 5.0 and its the first install we've ever done.
We'd like to preserve the database and install a fresh version of 4.5 if possible, but I don't know if that is going to work.
Here is an idea worth trying....
1. Install a fresh 4.5.1 with no demo data, using a NEW database
2. Use a tool such as SQLyog (www.webyog.com) to move the data from the Contacts, Accounts and other relevant tables from the 5.0 database to the tables with the same names in the NEW database you created for 4.5.1
3. DO NOT COPY THE CONFIG TABLE
After you've done that, login to 4.5.1 as the admin user, access the Admin control panel and do a repair on the database.
Some caveats..
a. I am assuming you haven't added any custom fields.
b. E-mail addresses are going to be a problem as they are stored in a different manner in 5.0 when compared to 4.5.1. The same is likely true for E-mail messages and there might be others.
Another option would be to use the built-in import capabilities, but that may present an issue depending on the type of data you want to transfer (i.e. there is no import of appointments for example)
Anyway, just an idea...

Luckily it sounds like we're not in a bad situation with where we are at with the development of our system based on what you've described.
Lastly, how picky is Sugar about letting you use 4.5 modules in 4.5.1? I know it absolutely stops me in 5.0 from using anything from a previous version.
Be careful on start and due times which are stored in 5.0 in one datetime field and in 4.5.x in two seperate fields for date and time.
Then look to your project tasks which have differnt handling in 5.0 and 4.5.
