Field list and label list not the same

Hi everyone...I am new at using Studio (CE) Version 5.5.1RC2 and have a question that probably has an obvious answer.

When I am in Studio and click on "Fields" in the Leads module, I see a list of about 38 fields and an area where some of the custom fields that i have create are as well.

The problem is there there are a bunch of fields, i.e. email address, that are NOT there, yet I see it listed under the "Labels" link also under the Leads module.

Why is this and does it matter? I see the email address field in the display options so that is fine but it is perplexing why there are only a limited number of fields showing up in the Fields section.

Also, is there a way to change the type of field (i.e. from text to dropdown) for a field that was already in there?

No, just create a new field of the type you require and replace the old field.
