how can different companies use the same base install od Sugar CE?

I want to separate companies like a true SaaS and am new to Sugar CE. Here's what I envision:
- Company A and it's employees go to sugar.example.com and login to see their data
- Company B and it's employees go to sugar.example.com and login to see their data
- Company C and it's employees go to sugar.example.com and login to see their data

Company A sees ONLY their data, and the same for Companies B & C.

Can that be done with SugarCRM Community Edition? If so, How?

Can it be done? Yes. Is it likely to cause you problems? Yes.

In theory you could setup a role that would limit a user's ability to only see those items that have been assigned to them, which one would assume are those that belong to a specific company.

However, you'll quickly find that there are other nuances to the application that will start causing you problems.

For example, while USER X from Company A would only see those records that are assigned to that user, USER X would have the ability to assign records to USER Y from Company B by default as Sugar wouldn't know that USER X is for Company A and USER Y is for Company B. That concept does not exist in the application and you would have to customize the code to get it to behave in a manner that addresses that problem or any other similar issue that might come up.

This is the main reason why people opt to have multiple installs instead.

Salesforce.com is a familiar example of what I am referring to. A company signs up and enters it's employees as users. They only see their company's data.

Can you make that happen with SugarCRM CE?

Aside from licensing issues, which I think this idea MAY break if you have commercial aspirations, the answer is no. The community version is set up for a single company. You could recode it to do exactly what you want however because you have the code. It would be no small task, but it could be done.

SugarCRM has a data center edition (http://www.sugarcrm.com/crm/products/dce.html) but the community edition is made for 1 company at a time.
