How to customise Priority dropdown?

Hi, Anyone know how I can customise the Priority dropdown. It is currently set to the default (High, Medium, Low) but I would like to have it as a numercial scale from 1-10, where 1 is 'not a priority' to 10 which is 'tip top priority'. I am also thinking that the current 'Priority' field may not provide my solution as it is text and my preferred system is numerical. The problem would be if I ever needed to sort by priority as numerical numbers would not sort how I wanted them to.

Any thoughts greatly appreciated.
