How do I delete fields from 'Contacts'

I must be missing something, because I cannot figure out how to delete certain fields ('birthdate', 'assistant', 'fax', etc.) from the contacts module.

Any help is appreciated!

These fields are standard fields.
You cannot delete them but you can remove them from the Edit/List/Detail Views, so they will not be used any more.
