While modifying the account detail view, the email field is no longer available on that form. It is still in the field list of accounts and still appears in the edit view but is gone from detail view. How can I get it back?

That is a brilliant question. I have that very same issue on a newly upgraded 5.5 system now.
goto admin>studio>accounts>detail view
drag the email address field into the right hand pane.
save.
run admin>repair>quick repair and rebuild.
That should work ... let me know.

Not yet - I'm not sure if I can run that on a living and breathing production system during working hours. So that'll have to wait for some maintenance window I suppose. But: I will give it a try and post the results here!
