Newbie Problem Setting Up Custom Fields

I am having problems completely setting up Sugar. I am a non IT - sales/bus dev guy, and because of a lack of resources, the system administrator. Everything is installed on my laptop as I am the only user - (my intent is to make a case for deploying for our small company, but feel I must prove the usability). I have successfully
>>installed Sugar
>>installed Outlook Plugin
>>imported data

My questions (issues):
1) I have customized my sales process and defined weights/% (via admin/studio/dropdown editor/sales_probability_dom), but when I go into my Opportunities, Probability is a open text field not linked to the Sales Stage. What am I missing?
2) My company has a recurring revenue model; our product has a unit cost. Thus, I need to capture / and forcast:
>>unit cost / cost of service (usually $2 - $5) which I define
>>number of lives / utilizers (typically between 500 - 10,000)

I then hope to multiply
>>unit cost x lives = protential revenue
>>unit cost x lives x weight/% (associated with probability in each sales stage) = weighted revenue

3) A minor issue - I seem unable to upload my comapny's logo. I did the follow (to no avail): admin/system settings/logos; I then navigated to my logo set at 212x40 pixels & uploaded. I tried jpg's, gif's, pmg's. What am I missing?
