could anyone tell me either way if it is possible to remove the opt out link on emails sent out in campaigns?

Yes, it's possible. What you can do is add a "Tracker Link" and select the "Opt-out" button. Then you have the option to add that tracker link to your email or not. If you don't add it, it won't be there.
