it is not possible to revert an already assigned document category to "-none-".
It this a bug (now filed as bug 7576)?

Hi,
Just tried your problem in our OS and PRO environment with 4.2.1b. The document category can be changed back to --none-- no problem.
Must be another problem. Has your SugarCRM been upgraeded from a previous version?

tested this with 4.2.1a and 4.2.1b. Seems like our installation is broken.
We've been following every update step since Sugar 2.5.
The category is simply not stored to the DB. The log says:
