Default Setting type/probability for stage picklist?

Sorry if this is a dumb question but how do I determine what sales stages on an opportunity are considered "won?" Right now it has all the defaults loaded, and I figured out that you edit the probability picklist to change probability percentages. However I made 3 stages all 100% probability which does change when I pick those, but the opportunity stays as in progress. I need to have 3 or 5 sales stages that are considered won, how do I do that?

Also what determines the win date? Is it expected close date that sugar uses as the date it was won?

Take a look at Admin > Drop Down Editor > sales_probability_dom. That'll allow you to control which values correspond with the various percentages.

As for your question on the date, it is based on the Expected Closed Date value.
