I was just wondering if anyone had a though on if I should I upgrade from 5.0.0a to 5.0.0e or wait for 5.1? I am not very knowledgeable in databases and it makes me a bit nervous to do an upgrade unless it will be really worth it.

Yes,
you should even upgrade to 5.0.0.e. Version 5.1 is yet a little buggy (no car for driving in sand dunes).
The upgrade from 4.5.1 to 5.0.0 worked only without problems from 5.5.1i - the latest version of 4.5.1
At the moment I am mirgating out company installation to 5.0.0.
The email problems seem to be mostly solved and the application seems to bee very stable now.
But remember: Upgrad only on a copy of your installation, nver on the production system.

Definitely upgrade. A vast number of issues were addressed in patch e most significantly the email system. And, since it's cumulative you'll gain all the fixes from b and c. Patch d was mostly for upgrades from 4.5.1 to 5.
I'll mention again as I have in many other posts that a great way to do development and even production work with Sugar is to get it in a VMware. This allows you to take snapshots of the current state of your machine and do whatever changes then see if they work. If they don't roll back and figure out the problem.
This was great for me on the patch e upgrade since I had a data problem but it took quite a few tries to figure it out.
And given that 5.1 is a fairly major upgrade you don't know how long its release will be pushed out.
