Sugar 4.5.0h customization/configuration questions

Hello together

I have this installation:

Operating system type and version: Windows 2003 SP1
Sugar Suite version 4.5.0h (Swiss German Language Pack)
Webserver type and version: Apache 2.0.59
PHP version: 4
MySQL server version: 5.0.24

Now my questions...:

1) I plan to add or change some fields in the account-details. I do not need SIC_code for example. Can I only change the table-name in myphpadmin or should I delete this field and add a new one? Can someone tell me whats the best practices and how to? My planed fields: Customer number (text), salutation (text), computer information (text),

1.b) Will a db-change like this creates problem when a new version comes?

2) I have to change the admin password in mysql. SugarCRM was not a problem. How can I do this in the database?

3) How should I edit the value "contacts.salution"? The "Mr" and "Ms" is fix in the database and I would like to have it in German.

4) Is there a possibilty, to see which accounts are deleted? I noticed that if a sales does delete an account, it is still in the database.
